My Journey So Far...

Hello,

I am Shweta and I come from Goa, a beautiful state in the south west region of India, known for beaches and tropical monsoon climate, it is a paradise if you love anything and everything with coconut.

My blogspot, Around The World On Your Plate has been a platform for me to share my creations from around the world with recipes modified into vegetarian and vegan.

To begin with, I never cooked or baked or even thought I could until 3 years ago and today cooking and baking has been an essential part of my life.

This journey started because of one phone call home that made me realize how much I missed those beautifully baked, hot dinner rolls or Pav as we call it.  Five months in a new country and comfort food was on my mind, so I googled the recipe to make a simple dinner roll and to my surprise I was able to make it perfectly.  I will never forget that day because I had no one to tell me that this is how you activate yeast and this is how you knead and let it proof.  It was a discovery by accident and I am happy I made it.

First attempt at baking Pav (dinner rolls)

Back home, I loved the smell of freshly baked bread and so baking became an integral part of my everyday life.  Being able to create something from scratch far and away from home and everything you knew, is by far the most beautiful feeling in this
world, for me cooking and baking brought this to reality.

I started exploring and creating new recipes and came up with ways to make East meet West and vice versa in terms of flavors.

In April of 2014, a friend of mine took me to the International Center of Purdue University where I met some really wonderful people from around the world and got to participate in a Food Bazaar representing India.  With over 22 countries representing their food, it was one of a kind experience.  The only disappointing factor for me was I could not try many food items as I am a vegetarian and that is where I came up with Around The World On Your Plate, where I could recreate some recipes that was shared with me by my friends into a vegetarian and vegan version.

Food and laughter are universal and people bond over it instantly and I believe everyone should be able to try all the cuisines around the globe.  My quest to make recipes into vegetarian and vegan continues and today I have around 60 plus recipes and many in process.
