Akki Rotti - Rice Flour Savoury Roti

Ingredients: 1 cup rice flour 1 small onion finely chopped 1 green chili finely chopped 1 tsp cumin seeds 1/4 cup grated coconut Salt to taste oil as needed water as needed Method: In a mixing bowl combine flour, salt and mix well.  Next, add all the remaining ingredients except oil and water. Add water in small quantity and start to knead a soft dough.  Once everything comes together, grease it with oil and set aside covered. Divide the dough into equal portions. Take a banana leaf or an aluminum foil and generously grease it with oil. Place one of the dough balls in the center and start patting it down with your fingers, if it gets too sticky just wet your fingers and continue to pat it down to a small 6-inch round shape. Place a skillet on medium heat and grease it. Chatpata Salad

Ingredients : 1 cup chopped lettuce 1 cucumber shopped 1 carrot grated 1/4 cup red onion chopped 1 tomato chopped 1 sprig cilantro chopped Salt as needed 2 teaspoon tamarind and dates chutney 1 teaspoon spicy coriander chutney 1/4 cup puffed rice Nilon sev to garnish Haldirams Moong dal to taste Nuts or fried green peas to garnish Method : Toss all the ingredients except the sev and nuts. Mix well and garnish with sev and nuts. Serve immediately.

Coconut Ladoo

Duration:  25 minutes Servings:  20 medium sized ladoo Ingredients: 200 grams condensed milk 1/2 teaspoon cardamom powder 4-1/4 cup desiccated coconut 1/4 cup desiccated coconut for rolling 1-2 teaspoons of oil Method: Heat condensed milk on low flame in a nonstick pan and add desiccated coconut and mix on low heat, cook for a 4-6 minutes on low until it forms a dough like consistency.  Turn off heat and let it cool enough. Rub oil on your palms and form small balls and roll it in the remaining desiccated coconut and place it on a serving tray.

Soya Granules Pakoda

Ingredients: 1/4 cup Soya granules soaked in water and drained 1 medium red onion, chopped 2-3 cloves of garlic, minced 1/2 tsp ginger garlic paste 1-2 chillies thinly sliced 1 sprig cilantro, chopped 1/2 cup chickpea flour 1 teaspoon cumin seeds 1/2 teaspoon turmeric powder 1/2 teaspoon red chilli powder 2 tablespoons rice flour (optional) Water as needed Oil for frying as needed Method: Soak Soya granules in water for a minute, drain and squeeze out excess.  Mix all the ingredients except oil and add water as needed to make a thick paste like batter. Heat oil in a pan and add spoonful and fry them until crispy and golden brown in color. Serve hot.

Masala Papad

Ingredients: 2-4 Urad dal papad 1 small red onion chopped 1 small tomato chopped 1 sprig of cilantro  1/4 cup of grated carrot 1/4 cup of grated coconut Salt to taste Lemon juice to taste Red chilli powder to  taste Oil as needed Method: Dry roast or deep fry the papad.  Mix all the other ingredients except coconut. Before serving, spread the above mix on the papad and sprinkle grated coconut and serve immediately. 

Potato Pinwheel Buns

Potato Pinwheel Buns Ingredients: For the buns: 1-1/4 cup whole milk 2 tablespoons of sugar 2-1/2 teaspoons of active dry yeast 1 teaspoon salt 3-1/2 tablespoons of butter 3-1/2 cups of all purpose flour and extra for dusting For the filling: 2 medium sized potatoes boiled, peeled, and mashed 2 green chilies sliced 1/8th teaspoon asafetida Cilantro to garnish Salt to taste 1 teaspoon mustard seeds 1 sprig curry leaves 1 tablespoon oil Optional: Sesame seeds Lemon juice For the filling: Boil, peel and mash up the potatoes and set aside.  Heat oil in a skillet and add mustard seeds and let them pop, next add in asafetida, curry leaves, and green chilies and fry.  Now add the potatoes along with salt and turmeric powder and mix well.  Add some lemon juice (optional) and garnish with cilantro and set aside. Healthy Chivda (rice krispie cereal)

Ingredients: 1 tablespoon of oil 1 teaspoon of mustard seeds 1/8th of a teaspoon of asafetida 1-2 red chillies slit or to taste 1 sprig curry leaves 1 teaspoons of roasted gram, peanuts, and raisins 1-1/2 cups of rice krispie cereal 1/2 teaspoon of turmeric powder 1/2 teaspoon of red chilli powder (optional) salt and sugar to taste Method: Heat oil on medium high and add mustard seeds and let them pop. Now add asafetida and next add red chillies and curry leaves and sauté well. Now add in the roasted gram, peanuts, and raisins and saute well. Now its time to add the rice krispie cereal and mix well. Now add all the spices with salt and sugar and mix well. Enjoy with a hot cup of coffee or tea.
