Pineapple Fried Rice (mildly flavored)

Ingredients: Ingredients: 2 spring onion sliced (whites and greens separated) 1 medium bell pepper diced 1/4 cup green peas (fresh or frozen) 1 medium carrot sliced 1/2 cup pineapple chunks (either fresh or canned) (see  notes below) Salt to taste White pepper and black pepper to taste 1 tablespoon oil 2 cups rice cooked (see notes) 1 tablespoon soy sauce Method: Heat oil and saute some green onions (white), next add in the bell pepper and green peas, along with some carrots. Once the vegetables are soft, add the pineapple chunks and saute. Next add the cooked rice and soy sauce and mix well.  Season well with salt and pepper.  Garnish with scallions (greens) and serve hot. Notes: For this recipe, I used canned pineapple and after removing the chunks, I reserved some of the water to use in cooking the rice. Potato Pinwheel Buns

Potato Pinwheel Buns Ingredients: For the buns: 1-1/4 cup whole milk 2 tablespoons of sugar 2-1/2 teaspoons of active dry yeast 1 teaspoon salt 3-1/2 tablespoons of butter 3-1/2 cups of all purpose flour and extra for dusting For the filling: 2 medium sized potatoes boiled, peeled, and mashed 2 green chilies sliced 1/8th teaspoon asafetida Cilantro to garnish Salt to taste 1 teaspoon mustard seeds 1 sprig curry leaves 1 tablespoon oil Optional: Sesame seeds Lemon juice For the filling: Boil, peel and mash up the potatoes and set aside.  Heat oil in a skillet and add mustard seeds and let them pop, next add in asafetida, curry leaves, and green chilies and fry.  Now add the potatoes along with salt and turmeric powder and mix well.  Add some lemon juice (optional) and garnish with cilantro and set aside. Simple Daal Fry (Daal Tadka)

Ingredients: 1 cup toor daal cooked 1/2 cup onion chopped 2-3 medium tomatoes chopped or pureed 1 teaspoon garlic minced 1-2 green chilies slit 1-2 red chili broken 1 tablespoon oil or ghee 1 sprig curry leaves 1 teaspoon mustard seeds 1 teaspoon cumin seeds 1 teaspoon turmeric powder 1 teaspoon red chilli powder Salt to taste Cilantro to garnish Method: Start by pressure cooking 1 cup toor daal in 2 cups of water.  Heat ghee/oil and add mustard seeds and cumin seeds and let them splutter. Now add green chillies and red chilli and curry leaves. Next add onion and garlic and saute well.  Once the onion and garlic are cooked, add the tomatoes.  I use both fresh and tinned tomatoes and even the puree for this recipe.  Next add turmeric powder and red chilli powder and mix well.  Cook until oil separates from the tomatoes. Chinese 5 Spice Noodles (Vegan)

Ingredients: 1 teaspoon ( or to taste)  Chinese 5 spice powder  1 teaspoon garlic (crushed) 1-1/2 cup mix vegetables (snow peas, carrots, green peas, beans, broccoli, bell pepper) etc 2 cups cooked noodles (4 ounce) 2 spring onion chopped with whites and greens separated 1 tablespoon oil 1 tablespoon soy sauce Salt and pepper to taste Method: Heat oil in a pan and saute some garlic until slightly brown. Next add spring onion whites and saute well. After that add in all the vegetables of your choice, I am using 1-1/2 cup of frozen vegetables. Stir fry until almost cooked and add soy sauce and  five spice powder and mix well.  Add in the cooked noodles and mix well. Season with salt and pepper to taste. Garnish with spring onion greens and serve hot. Note: Five spice powder is a combination of 5 spices in equal proportions that is star anise, cloves, Szechwan pepper, and cinnamon. Creamy Coconut Rice (South Indian Style)

Ingredients: For rice: 1 cup uncooked rice 1 cup water and 1 cup coconut milk mixed well. Salt to taste For Seasoning: 1-2 teaspoons of oil 1 teaspoon mustard seeds A pinch of hing 1 teaspoon urad dal 1 sprig of curry leaves 1-2 green chillies or to taste 1 sprig of cilantro Few peanuts 1 teaspoon turmeric powder Method: Mix coconut milk with water and salt and add to uncooked rice.  Cook it either in the microwave or a cooker. Adding equal proportion of coconut milk and water to cook the rice makes it more creamy. Once the rice is cooked, fluff it with a fork and set aside. In a pan, heat oil and add mustard seeds and let it splutter. Next add hing, curry leaves and green chillies (slit) and saute well. Add urad dal and saute until slightly toasted. Now its time to add the cooked rice along with turmeric powder. Season with salt to taste and mix well. Garnish with cilantro and peanut and serve hot.

Cream Cheese Pasta

Ingredients: 1-2 tablespoons of oil 1 cup chopped onion 1 cup of sliced mushroom 8 ounce of spinach, chopped and wilted 1/2 cup tomato puree salt and pepper to taste Chilli powder (optional) 4 ounce of cream cheese (at room temperature) 6 ounce of cooked pasta Method: Start by heating oil and frying the onion.  Once the onion gets translucent, add sliced mushrooms.  I am using baby bella mushroom, but you can use any of your choice. Next add chopped and wilted spinach, you can use either fresh or frozen.  Saute well. Now its time to add the tomato puree and mix well.  Season with salt and pepper and any other seasoning mix of your choice, I add some chili powder. Once everything is well cooked, add the cream cheese which is at room temperature and mix well. Once that is done, add in you favorite pasta that is pre-cooked and ready to this and mix well. No onion bhel - Amma's style

Time:  10 minutes. Servings:  2 Ingredients: 3 cups puffed rice 1-2 green chillies or to taste 3 big tomatoes or 1-1/2 cup tomato puree and 1 tomato sliced 1-2 sprigs of cilantro 1 teaspoon oil 1/4 cup grated coconut Salt to taste Sev/Aloo bhujia to garnish Method: Start by adding salt and oil to puffed rice and set aside. In a blender, put cubed tomatoes and slit green chillies and grind until smooth paste. Now mix everything until its well incorporated and the puffed rice has almost reduced to half. Garnish with sev and cilantro and a few slices of tomato and serve with a hot cup of tea/coffee.
